Canyon Coffee is an LA-based specialty roaster founded in 2016 by Ally Walsh and Casey Wojtalewicz, bootstrapped from a Beachwood Canyon apartment on a credit card and profitable from day one. The line is 100% organic and includes Sagebrush, a Regenerative Organic Certified coffee from Colombia's ASPRASAR co-op — one of only four US roasters carrying ROC coffee. The company hand-roasts in Echo Park, opened its first cafe there in 2022, and added a Prospect Heights Brooklyn cafe in 2026.
