BROWN Coffee and Bakery

Since 2009 · Chang Bunleang, Kang Hok, Chhong, Kang Sen

Overview

BROWN was started in 2009 (incorporated 2010) by four Cambodian cousins who came home from study abroad — Chang Bunleang as managing partner, Kang Hok as architect, Chhong as pastry chef and interior designer, Kang Sen as structural engineer — opening their first café on Street 214 in Phnom Penh under the nickname 'Brown Samdech Pan.' The brand takes its name from 'Tnort,' Khmer for the colour brown and the country's national tree, and has grown to roughly 700 staff and 39+ stores across greater Phnom Penh and Siem Reap, all roasted in-house and built around a 'Khmer-modern' design language with a different statement piece per location.

Known for

  • Founded 2009 by four Cambodian cousins returned from overseas studies
  • Roughly 700 staff and 39+ stores across Phnom Penh and Siem Reap, all roasting in-house
  • Brand-name 'Tnort' is Khmer for the colour brown and Cambodia's national tree
  • Three-format retail system: BROWN Express (takeaway), BROWN Classic (full menu), BROWN Roastery (flagship)
  • Architecturally distinct stores incl. Pasteur roastery (copper latté-art ceiling), K Mall 'Cave' (1,000+ rattan strips ceiling), Airport sampeah-form roof

Why it matters

BROWN is the operation that opened Cambodia's third-space café culture — a public coffee venue accessible beyond the older men-only roadside iced-milk-coffee tradition — and turned it into a homegrown design and architecture franchise. The cousins' 'Khmer-modern' aesthetic, executed through 39+ visually distinct rooms, is now the template for a generation of Cambodian café owners, and BROWN is the clearest single reference point for Cambodian specialty.
