HAYB is a father-and-son business founded in 2016 by Wiktor Borowski and his father Robert at Aleje Jerozolimskie 200 in Warsaw. They originally traded as Coffee Republic for two years before a UK company of the same name claimed the rights and forced a rebrand — the new name is short for 'How Are You Brewing?' Wiktor and head roaster Dawid Zadara are both certified Q Graders, and HAYB became Polish Brewers Cup coffee sponsor in 2018. Sourcing leans on importers like Falcon Specialty, Ally Coffee and Touton plus direct relationships in South America and Africa.
HAYB anchors the Warsaw specialty scene at a tier above the city's hipster cafes — Q Graders on staff, championship-circuit credibility, sponsoring the national brewers' cup. Polish specialty had been growing since the early 2010s but mostly as café-only operations; HAYB is one of the few Polish roasters with serious wholesale and export reach.
