Overview

Johan & Nyström was founded in 2004 by Johan Wallenborg, Ola Nyström and Johan Damgaard — a group of coffee-loving friends who set up a small roastery in Tullinge, south of Stockholm. The mission was direct: get Nordic people to drink better coffee, sourced transparently from named farms. They were the first specialty coffee roastery in Sweden. The original Tullinge roastery had what they describe as charm and "thermal events" (their euphemism for fires); in mid-2017 the company moved into a custom-built facility in Länna, which they describe as one of the most modern specialty roasteries in Europe.

Why it matters

Johan & Nyström is the brand that made specialty coffee a category in Sweden — and the supply contract with Espresso House (~1,500 cafés) gives them an unusual position: small-roaster sourcing standards executed at a scale that can move volume at producer level. The Länna roastery, with its biogas-fired roasters, custom blending and packaging line, and 12-minute-batch flow, is the production answer to whether sourcing transparency can be preserved at multi-thousand-tonne scale.
