Singular Coffee Roasters was founded by Camilo Vásquez, who began as a barista in Santiago before an Ethiopian single-origin shifted his career toward sourcing and roasting. The roastery operates three Santiago locations — the Girardi 1569 flagship in Barrio Italia, plus outposts on Merced 295 and Suecia 161 — and roasts in plain view of customers, framing the operation as much around education as commerce. Singular runs cuppings, brewing classes, and tastings designed to grow specialty literacy in a market where mainstream consumption skews to commodity-grade espresso, and they offer a multi-method bar including Chemex, V60, and AeroPress for the same single-origin lots they roast on site.
Singular is among the most-cited reference points for Chilean specialty coffee, anchoring Santiago's third-wave scene with public-view roasting and an explicit education mission in a country where specialty was virtually nonexistent until recent years. By pairing the Barrio Italia flagship's roastery-bar format with two satellite cafés in central Santiago, Singular has become the default destination for Chilean consumers exploring specialty coffee for the first time.
